Varietal Composition - Muscat of Spina 85%, Vidiano 15%.
Vineyard - from Alagni area, altitude 480 m, soil clay-loam.
Vinification - hand-harvested in mid-August. Exact harvest time defined by berry sensory assessment to obtain the optimum taste and aromatic balance. More than 55% of the grapes remained on the skins for 2 days at 10 °C. While the rest of the grapes remained on the skins for 1 day. Fermentation temperature range from 16-17 °C and lasted 18 days.
Eye - pale straw color.
Nose - lovely floral character including rose petals and white blossoms with fleshy citrus peel and mineral hints.
Palate - Long and full-bodied with vibrant acidity, beautiful balance and an intense aromatic mouthfeel.
Pairing Suggestions - Cretan fennel pies, risotto with saffron, pasta with white sauces, shrimp spring rolls and Thai or spicy cuisine.
Best served at 10-12 °C.
