Classification – dry white wine, PGI Crete.
Varietal Composition - Vidiano 100%.
Vineyard – from Heraklion area, soil clay – loam, altitude 550 m.
Vinification - this wine is produced from organic vineyards at an altitude of 550 m. Harvested by hand during the last week of August. The grapes were destemmed and then subjected to a 24h skin contact at 10 °C. The free run juice was led into stainless steel tank where it was fermented at 15-17 °C for 16 days. The wine went through spontaneous malolactic fermentation.
Eye - pale yellow color.
Nose - aromas of sweet stone fruit and blooming herbs with hints of citrus.
Palate - the mouthfeel is velvet and full of texture with a strong presence of creamy fruit and mineral notes in the aftertaste.
Pairing Suggestions - all sea food, meat in creamy sauces and Mediterranean dishes with vegetables like stuffed zucchini blossoms.
Best served at 10-12 °C.
