Grape variety - Assyrtiko 100%.
Vineyard - from the “Giannas” vineyard.
Vinification - after a short pre-fermentation cold maceration the must is transferred to stainless steel tanks where the fermentation takes place at low temperatures of 12-13 °C. Lees aging for a period of 4 months with light battonage.
Eye - bright yellow color with green hues.
Nose - delicate, intense aromas of pear, white flowers, and citrus fruits. Pronounced aromas of bitter orange, with hints of mastic and fennel root.
Palate - rich, oily mouth, highly refreshing acidity, and a characteristic saltiness. Enjoyable long aftertaste.
Pairing Suggestions - ideal match with seafood, grilled vegetables, vegetable soups, grilled fish, and fresh salty cheeses.
Best served at 10-12 °C.
