Classification - dry white wine, PDO Santorini.
Varietal Composition - Assyrtiko 95%, Aidani 3%, Athiri 2%.
Vineyard - from the vineyards nearby Akrotiri and Megalochori area.
Vinification - after a short pre-fermentation cold maceration the must is moved in French oak barrels, with capacities of 225, 300, and 500 l, where the whole fermentation takes place for better integration of the oak aromas and flavors. Maturation for 4 months on fine lees with battonage.
Eye - bright yellow color with golden tones.
Nose - elegant aromas of lime and magnolias flowers, a sense of citrus jam and mastic that co-exist harmoniously with herbal aromas of thyme, sage, and mineral hints.
Palate - the wine has full body, oily texture, and high acidity which balances the depth of fruit and the high alcoholic content. Long aftertaste with persistent aromas of wood, roasted coffee, and vanilla.
Pairing Suggestions - ideal match for oily fish, pasta with rich creamy sauces, mature yellow cheeses, smoked eggplant dip, mushrooms risotto, and poultry.
Best served at 12-13 °C.
