Varietal Composition - Assyrtiko 90%, Aidani 10%.
Vineyard - from the vineyards nearby Pyrgos village.
Vinification - after a long-lasting skin contact follows a slow pressure and the free-run juice is moved to stain steel tanks where the fermentation takes place at controlled temperatures of 14-15 °C. Maturated on fine lees ~ 6 months.
Eye - saturated straw gold color.
Nose - complex olfactory character with a pallet of different fruit aromas (apricot, peach, grapefruit, litchi, apple, and pear).
Palate - savory, rich, with crispy character, and a medium aftertaste.
Pairing Suggestions - oily fish, risotto with white sauces, poultry dishes, and mature cheeses.
Best served at 11-12 °C.
