Varietal Composition - Sauvignon Blanc 100%.
Vineyard - the selected sub mountainous vineyard “Kriovrisi” on the north side of mount Chlomo facing west towards the fresh currents of mount Parnassus, crucial for the summer high temperatures, with a unique soil containing limestone sediment.
Vinification - cold maceration pre-fermentation following a classic white wine vinification. Fermentation occurs in controlled temperatures as low as possible in order to bring all the fresh aromas of the variety.
Eye - pale bright yellow color.
Nose - aromas of citrus, melon, green apple, grapefruit and fresh herbs.
Palate - light body, crisp acidity, and refreshing finish.
Pairing Suggestions - green salad, seafood appetizers, fresh oysters, pasta with pesto sauce, grilled fish, shrimps with garlic sauce, asparagus, mild Indian cuisine, mild Thai sea food, ceviche.
Best served at 7-10 °C.
