Varietal Composition - Xinomavro ungrafted 90%, Assyrtiko 10%.
Vineyard - for Xinomavro from Rasto, Prisecca, Sotirtsko, for Assyrtiko from Levea, soil sand-clay, altitude 650 m.
Vinification -
destemmed,
crushed and lightly pressed in pneumatic press to obtain free run juice, temperature-controlled
fermentation at 18-22 °C, low sulphur use, no chemical additives, second
fermentation in bottle – Traditional method. Sur latte for 12 months, released 3
months after disgorging.
Eye - pinkish yellow in the glass, beautiful sparkles and mousse.
Nose - rich yeasty nose, aromas of lime, pear and strawberry.
Palate -
mouth filling creamy mouse with everlasting tiny
bubbles in perfect contrast with its refreshing acidity, balanced, considerable
length. Cold climate type of sparkling wine.
Pairing Suggestions - perfect with seafood, excellent match with cheese and even by the glass.
Best served at 6-8 °C.
