Classification – dry rose wine, PGI Crete.
Varietal Composition - Liatiko 100%.
Vineyard - single vineyard “Kedros”, Rethymnon, altitude 850 m, soil loam.
Vinification - this pre-phylloxera Liatiko is being grown here for over a century. The grapes were destemmed and slightly crushed and had a short skin contact for about 2 hours. The free run juice was fermented for 15-18 days at temperatures between 17-20 °C. The wine was aged in 225 l, 300 l, 600 l oak barrels for almost 2 months.
Eye - pale rose color.
Nose - a steely mouth, characteristic of the firmness of its origin. Fruity aromas of several types of wild berries and citrus zest are perfectly balanced with a sense of chalkiness and notes of winter flowers.
Palate - the mouth is long with vibrant acidity underlined by notes of minerality and an intense fruity aftertaste.
Pairing Suggestions - shellfish, grilled fish like red mullet and other seafood dishes.
Best served at 10-12 °C.
