Classification – dry rose wine, PDO Amyndeon.
Varietal Composition - Xinomavro 100%.
Vineyard - situated at an altitude of 620-710 m, sandy – sandy clay soil over limestone of excellent drainage.
Vinification - destemming, optical grape sorting and light crushing. Cold soak at 8 °C for two hours. Alcoholic fermentation in stainless steel tanks with cooling jackets at gradually increasing temperatures. Maintenance of wine ‘’sur lees’’ for three months with regular steering. Saignée procedure.
Eye - bright rose color, with salmon color hints.
Nose - fruity with rich expression of rose petals and strawberries.
Palate - well balanced mouth, quite full, fat but balanced, reminding the nose aromas, with long aftertaste.
Pairing Suggestions - with Greek cuisine, roasted red peppers, stuffed tomatoes and peppers. Pasta in light tomato sauces, grilled salmon, crab cakes, spicy gazpacho soups, pizzas as well as with a great variety of exotic cuisines, Chinese, Thai, Japanese.
Best served at 12 °C.
