Varietal Composition - Xinomavro 100%.
Vineyard - single vineyard of Paliokalias, altitude 250-280 m, the soil is alkaline and clay-limestone, rich in magnesium, normal in calcium, and poor in potassium. The vines are 55 years old.
Vinification - the selective harvest by hand, traditional red wine vinification with 12 days extraction, maturation for 18 months in French and American oak barrels, and remains in bottle for 4 years before release.
Eye - bright dark ruby color.
Nose – impressive, with tertiary aromas that confirm its premium character. Notes of strawberry jam and plum jam are joined by sun-dried tomato, olive paste, leather, tobacco, chocolate, liquorice and eucalyptus, creating a layered experience that stands out.
Palate - rich body, high acidity, ripe and soft tannins. Very good structure gives intensity and very long finish, long aging potential.
Pairing Suggestions - premium cuisine, pairing unique haute cuisine dishes with special cuts of beef, game (deer, venison), pasta, mature and hard cheese.
Best served at 16-18 °C.
