Varietal Composition - Kotsifali 100%.
Vineyard – from Heraklion area, altitude 500 m, soil loamy sand.
Vinification - hand-harvested. Exact harvest time defined by berry sensory assessment to obtain the optimum flavor and aromatic balance. Fermentation with maceration on the skins for an average of 6 days. Pre-fermentation maceration at 5 °C for two-thirds of the grapes. Temperature controlled fermentation between 20-28 °C for 10 days.
Eye - bright, mid ruby color.
Nose - aromatic red cherries and zesty dark fruits with a touch of spice.
Palate - balanced and savory palate with smooth tannins, juicy acidity and a long fruity aftertaste.
Pairing Suggestions - Mediterranean dishes with tomato, roast meat and spicy types of cheese.
Best served at 16-17 °C.
