Classification – dry red wine, PGI Cyclades.
Varietal Composition - Mandilaria 100%.
Vineyard - from “Agia Marina” vineyard nearby Megalochori village.
Vinification - after 4-5 days of maceration, the free-run must is fermented in stainless steel tanks. The fermentation for the 60% of the must is finished in 225 l barrels and for the 40 % in stainless steel tank. After several months of maturation, the final blend is bottled.
Eye - plumy red color with violet hints.
Nose - aromas of fig, sour cherry, carnation flowers, vanilla, and a sense of strawberry marmalade.
Palate - medium body with firm tannins and an earthy character that reveals the unique terroir of Santorini. Aftertaste with aromas of charred wood, and roasted nuts.
Pairing Suggestions - pork cooked with prunes, varieties of fat cheeses, and prosciutto. Dishes of roasted beef too. It is a good match with lobster pasta and tuna fish.
Best served at 14-16 °C, decanting is recommended.
