Classification – dry red wine, PGI Central Greece.
Varietal Composition – Syrah 100%.
Vineyard - “Amplelochori” at the South-East slopes of mountain Helicon, altitude 280-320 m, soil sandy clay.
Vinification - a unique technic. The extraction of the seeds from the grapes before the start of the fermentation gives us a wine that has tannins only from the skin of the grapes (mild & mellow). Also, the extensive use of CO2 during the phase of the cold extraction of color & aromas helps us to use a very low quantity of sulfites. Finally, the grape skin stays for 2-3 days in contact with the wine, that is giving us less extraction of color and tannins, resulting to a light red and mellow wine. Malolactic fermentation is applied directly after the end of the fermentation.
Eye - dark ruby red color.
Nose – aromas of well ripened black cherry and blackberry with notes of black pepper and cinnamon.
Palate - taste of crispy black fruit, black pepper & cinnamon, acidity medium with mellow and round tannins, body is medium with long aftertaste.
Pairing Suggestions - grilled fish, seafood and dishes that have ripe fruity notes, red meat stewed, red sauce with sweet spice.
