Classification – dry red wine, PGI Florina.
Varietal Composition - Merlot 80%, Tannat 20%, the best 17 barrels of each harvest were the winemaker selects to present the absolute expression and dynamic of the Amyndeon viticulture zone.
Vineyard - situated at an altitude of 620-710 m, sandy – sandy clay soil over limestone of excellent drainage.
Vinification - destemming, no crushing, cold soak - skin contact under controlled conditions, alcoholic fermentation at gradual increase temperatures, maintenance of wine "sur lie" for eight months with regular stirring. Ageing 36 months in Allier – Bertrange new oak casks medium toast at 200% (18 months+18 months) and 24 months in bottle. No treatment or filtration before bottling.
Eye - deep ruby with a hint of purple notes.
Nose - some black fruit, spices, cassis.
Palate - fine, rich, intense, quite complex, very long. Develops in mouth very good.
Pairing Suggestions - with rich meat dishes, grilled or with rich sauces, cooked with vegetables, roots and wine. Marinated game, with chestnuts and plums. Full body mature creamy cheeses with intense and full favor.
Best served at 16-18 °C.
