Classification – naturally sweet wine from white sundried grapes, PDO Santorini.
Varietal Composition - Assyrtiko 70%, Aidani 25%, other white grapes 5%.
Vineyard - from the vineyards nearby Akrotiri area.
Vinification - overripe white grapes are sundried for a period of 7-15 days. Then destemmed and pressed. The sweet juice ferments slowly for more than 2 months in stainless-steel tanks at a controlled temperature. After the end of fermentation, the naturally sweet wine is moved to oak barrels for maturation for at least 2 years.
Eye - deep red color with brown shades.
Nose - Long-lasting aromas of dried apricot, honey, roasted nuts, bitter chocolate and some hints of orange.
Palate - Honeyed, velvety mouth with hints of fig, raisin, caramel and vanilla. Long aftertaste which balances between sweetness and razor-sharp acidity.
Pairing Suggestions - dark chocolate, fruit tarts, desserts with candy and nuts. Matches also with strong dishes like foie gras and pungent cheeses.
Best served at 8-10 °C.
